Idaho Spuds
These came in the mail yesterday and every creature at my house is happy.Even the little dog, who once was naughty and ate 8 of these in one afternoon. We counted wrappers in the backyard.
Chocolate marshmallowy goodness enrobed in chocolate with a coconut covering. We start hiding these in various spots in the freezer when only ten or so are left. I may try using the foodsaver if I can borrow the jar attachment from someone and put some of these in a canning jar.
Vegan Brownies
Some of you may be thinking "EWWWWWWW...Vegan...." right now. My daughter made these today because she has a friend who is a vegan, and I was pleasantly surprised. They are really fudgey and good. They are everything a regular brownie is, minus the eggs. Yum. This would also be a great recipe to keep in your food storage files.
Vegan Brownies

2 C. unbleached all-purpose flour
2 C. white sugar
3/4 C. unsweetened cocoa powder
1 tsp. baking powder
1 tsp salt
1 C. water
1 C. vegetable oil
1 tsp. vanilla extract
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla, mix until well blended. Spread evenly in a 9x13 inch baking pan.
Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

Egg rolls
Egg Rolls I made egg rolls last night for dinner out of the Pillsbury crescent rolls. They were lacking something, either they needed more garlic salt or some ginger or soy sauce, I don't know. I'm not gonna lie, they were a little weird. But in a, "I am so going to make them again" kind of way.
My daughter liked them. I liked them. I don't think the male folk in the family did. Here's what I did:
I sauteed off a bag of cabbage and carrot cole slaw in butter and olive oil, sprinkled with Lawry's garlic salt and added some sliced scallions and shallot. I would have used some bean sprouts but couldn't find any fresh in the grocery store. For one tube of crescent rolls, you will probably only need a half of a package of slaw. Less if you're using bean sprouts. When soft I then let the cabbage cool completely. On the second try at this, I put some uncooked sliced scallions on before bakingI unrolled the crescent rolls and separated them into the rectangle shape and pressed the other perforations together. I put some chopped cooked shrimp on the rectange, then the cooked cabbage and rolled them up lengthwise and sealed the edges and the ends with my fingers. I baked them according to the crescent roll baking instructions. Made a nice side to our basil Tilapia and ham fried rice.
When I make them next time I will season the shrimp, or whatever protein I use, and the cabbage more with salt or soy sauce or ginger. The crescent roll is so bland and thicker than a normal egg roll wrap that the flavor of the egg roll needs to come from within.

Frozen whipped cream
I realize that white on white isn't the best for photos.
Just a quick tidbit. My mom used to freeze heavy cream in the carton and she also used to freeze whipped cream in spoonfuls and take them out to defrost and use later. So I couldn't remember if I'd done it before and had a boatload of whipped cream leftover from one of hubby's caterings. So I put a sheet of parchment on a baking sheet and put dollops of cream on it and then froze them. When they were solid (overnight) I then peeled them off of the parchment or waxed paper and put them in a ziplock bag.
I've been taking them out and putting them in a bowl and defrosting either in the microwave or just on the counter and then using them in my hot chocolate or homemade warm delights. Works great. Leave it frozen on the warm delight and it kind of tastes like ice cream.

Great deals on prepared foods this past week at Bashas. What normally comes to $80, this week is $66. Great week to add to your stock of Ramen noodles or Rice A Roni. This past week I learned how to use a Foodsaver with the jar attachments to save things like chocolate chips, m & m's, marshmallows, cake and brownie mixes, nuts, choc. covered craisin, dried fruits in jars so that their shelf life is more like 5 years or more instead of 1 year. I also bought some fruit snacks and fruit bars to try out in the jars. Anyway, I'm thinking at .49 a box, that Rice A Roni would work great in the jars also. And you maybe could try putting the Ramen Noodles in the Foodsaver bags.
I've been in a funk today. And if you're wondering, my Christmas tree is still up. Anyway, hope that this week's menu appeals to you.

Chop Salad
My kids tease me that half of the photos on my camera are of food. They are embarrassed to show their friends pictures off of my camera. It is what it is.
I don't know what this salad is called. Sooz got the recipe off of the "Two Peas and a Pot" blog and she used it for the Relief Society Christmas dinner this past December. I made it for her that night. The poor woman was in charge of food that night and also had a daughter getting married in two weeks so she was right on the edge of somethin. I also did a trial run of the salad a week before to see how much we would need to have for that night. It is really yummy. Very colorful. Very garlicy. Or as Emeril would say, "Gaaaaahlic". Very tasty salad.
For the first time I made this salad, the trial run, I used craisins because I didn't have golden raisins. Or any raisins for that matter. I had thrown out the rock hard raisins after I had exhanged them for chocolate chips in the cup that my son was using as a finals studying motivator. That's what you see in the above fuzzy shot. Craisins. I also used lemon juice concentrate for the dressing. It worked fine, just use a little less, because it's well, it's concentrated.
Chop Salad
from Two Peas and a Pot
Chopped butter lettuce
Chopped tomatoes
Chopped avocado
Sliced or diced red onion
Toasted almonds
golden raisins
Dressing:
1/4 C. cider vinegar
1 T. sugar
1/2 tsp. pepper
1/4 tsp. salt
2 T. Olive Oil
1 T. lemon juice
1/2 tsp. minced garlic
Plan on about 6-7 servings per head of butter lettuce. My daughter and I could each eat half a head of salad, but for the dinner, I planned on about 7 servings per head and it turned out about right.
