Can you believe that this is already the last week of January? At least I got my new curtains hemmed this weekend. The ones I've had since November and have been up and covering the floor at least by 4 inches and the dogs have been laying on them. They thought that they were Queens(well they do anyway) or something laying on soft silky fabric.

Weekly menus planned with what's on sale in Arizona grocery stores. Target price per week is $75 to $80 per week and portions in the menus will feed a family of four to six, depending on appetites. So this is for the food buyer or preparer of the family. To help them plan to stay within a budget or give them the little extra ideas of what they need to come up with breakfast, lunch and dinner each day of each week.

Frozen whipped cream

I realize that white on white isn't the best for photos.
Just a quick tidbit. My mom used to freeze heavy cream in the carton and she also used to freeze whipped cream in spoonfuls and take them out to defrost and use later. So I couldn't remember if I'd done it before and had a boatload of whipped cream leftover from one of hubby's caterings. So I put a sheet of parchment on a baking sheet and put dollops of cream on it and then froze them. When they were solid (overnight) I then peeled them off of the parchment or waxed paper and put them in a ziplock bag. 

I've been taking them out and putting them in a bowl and defrosting either in the microwave or just on the counter and then using them in my hot chocolate or homemade warm delights. Works great. Leave it frozen on the warm delight and it kind of tastes like ice cream.

Great deals on prepared foods this past week at Bashas. What normally comes to $80, this week is $66. Great week to add to your stock of Ramen noodles or Rice A Roni. This past week I learned how to use a Foodsaver with the jar attachments to save things like chocolate chips, m & m's, marshmallows, cake and brownie mixes, nuts, choc. covered craisin, dried fruits in jars so that their shelf life is more like 5 years or more instead of 1 year. I also bought some fruit snacks and fruit bars to try out in the jars. Anyway, I'm thinking at .49 a box, that Rice A Roni would work great in the jars also. And you maybe could try putting the Ramen Noodles in the Foodsaver bags.
I've been in a funk today. And if you're wondering, my Christmas tree is still up. Anyway, hope that this week's menu appeals to you.

My kids tease me that half of the photos on my camera are of food. They are embarrassed to show their friends pictures off of my camera. It is what it is.

I don't know what this salad is called. Sooz got the recipe off of the "Two Peas and a Pot" blog and she used it for the Relief Society Christmas dinner this past December. I made it for her that night. The poor woman was in charge of food that night and also had a daughter getting married in two weeks so she was right on the edge of somethin. I also did a trial run of the salad a week before to see how much we would need to have for that night. It is really yummy. Very colorful. Very garlicy. Or as Emeril would say, "Gaaaaahlic". Very tasty salad.
For the first time I made this salad, the trial run, I used craisins because I didn't have golden raisins. Or any raisins for that matter. I had thrown out the rock hard raisins after I had exhanged them for chocolate chips in the cup that my son was using as a finals studying motivator. That's what you see in the above fuzzy shot. Craisins. I also used lemon juice concentrate for the dressing. It worked fine, just use a little less, because it's well, it's concentrated.
Chop Salad

Chopped butter lettuce
Chopped tomatoes
Chopped avocado
Sliced or diced red onion
Toasted almonds
golden raisins
Dressing:
1/4 C. cider vinegar
1 T. sugar
1/2 tsp. pepper
1/4 tsp. salt
2 T. Olive Oil
1 T. lemon juice
1/2 tsp. minced garlic
Plan on about 6-7 servings per head of butter lettuce. My daughter and I could each eat half a head of salad, but for the dinner, I planned on about 7 servings per head and it turned out about right.
