12 rhodes Dinner Rolls, thawed but still cold

zest from 2 whole lemons

1/2 C. sugar

1/4 C. butter, melted


Citrus Glaze:

1 C. powdered sugar

1 T. butter, melted

2 T. fresh lemon juice


Mix lemon zest with sugar. Cut rolls in half and place in a 12-inch sprayed deep dish pizza pan or 9x13-inch sprayed baking pan. Drizzle 1/4 C. melted butter over rolls. sprinkle with lemon zest/sugar mixture, reserving 1/2 of mixture to sprinkle on just before baking. Cover with sprayed plastic wrap. Let rise until double in size. Remove wrap. Sprinkle on remaining mixture. Bake at 350 degrees F 20-25 minutes. Remove immediately from pan and place on cooling rack. Combine glaze ingredients and mix well. Drizzle over pull-aparts.

Another Monkey Bread Recipe

So how many monkeys does it take to make Monkey Bread?

Monkey Bread
from Sooz

24 Frozen Rhodes balls
1/2 small box butterscotch pudding mix (not instant)
1/2 C. magarine
1/2 C. brown sugar
1/2 tsp. cinnamon

1-Place dough balls in unbuttered bundt pan. (I cut them into quarters) (So I assume that they are thawed then)

2-Sprinkle pudding over the dough

3-Melt margaine and brown sugar and cinnamon. Pour over top. Leave overnight. (Not sure if you would leave it on the counter or in the fridge overnight, I'll have to ask Sooz.) Bake 350 for 20-30 minutes. Invert to cool.

Monkey bread

I wasn't fast enough to get a photo of this before it began to be eaten. I made this this morning. So good. And I used cheap Bashas' Food Club brand tube biscuits at .66 each. Worked out marvelous. The husband got this recipe from our friend Tom. It is now afternoon and all of the Monkey bread is gonzo. Tom says that making the cream cheese icing below and putting some on top of the bread while it is still warm is yummy, and then making sure you have some for dipping is necessary. I didn't know cream cheese icing was an option when I made this so we had it without. I think that we consumed enough calories without it.

for 8 people
4 tubes Biscuits (refridgerated)
3/4 C. granulated sugar
3/4 C additional granulated sugar
1/3 C. brown sugar
1/4 C. evaporated milk
1 C. butter
1.5 C. chopped pecans (I made it without nuts)
2 tsp. cinnamon

Preheat oven to 350 degrees F. Cut biscuits into quarters. The biscuits I used were small so I cut them into thirds.. Combine 3/4 C. white sugar with the cinnamon. Roll each biscuit quater in the cinnamon/sugar mixture. In a cake pan or baking dish, (I used two bread pans), layer the biscuits and the pecans. In a saucepan, slowly bring milk, remaining 3/4 C. white sugar, brown sugar, and butter to a boil. Remove from heat. Pour over biscuits in the pan. Bake for 30 minutes or until it is cooked to your liking! Flip pan over onto a serving dish and serve right away! Voila!

Variations:

Chopped almonds instead
Layer apple chunks and walnuts with biscuits
Layer biscuits with strawberry jam and fresh strawberry slices, omit cinnamon
Apricot jam
Raspberry jam and mixed berries

Icing
1/2 pound cream cheese (8 oz.)
1/2 pound butter (1 C.)
1 pound powdered sugar (4 C.)
1 tsp. vanilla extract
t tsp. lemon juice

Allow cream cheese and butter to get to room temperature. Beat butter and cream cheese together in a large bowl with a mixer. Slowly add in the powdered sugar. Mix for 12 minutes. Do not mix less than that. When almost done, add in the extract and lemon juice.

White bread


You need a basic white bread dough recipe in your bag of tricks if you are a from scratch cook. You just do. But, I suppose you can use wheat bread dough for anything we would make from white bread dough. You can use this basic bread dough for homemade pizza crusts, scones, fry bread for Navajo tacos, fry bread just for the heck of eating fried bread dough with honey on it, bread sticks, rolls, cinnamon rolls and on occassion I have even attempted to make soft pretzels out of it. I got this recipe off of Martha Stewart's Living website. I will paraphrase the instruction part of it as my printer cut off a word or two here and there.

Patricia's Basic Bread Dough

Makes 1 1/2 lbs. dough
One simple, easy-to-prepare bread dough can be transtformed into breads, both sweet and savory. Chef Patricia Wells likes to use this dough in everything from pizza to dinner rolls.

1 teaspoon active dry yeast
1 teaspoon sugar
1 1/3 C. lukewarm water (about 105 degrees)
2 tablespoons extra-virgin olive oil
1 teaspoon fine sea salt (I use what's in the blue canister, Morton's)
4 C. bread flour, plus more if necessary

1. In the bowl of a heavy-duty electric mixer fitted with a dough hook attachment, combine yeast, sugar, and water, and stir. Let sit until foamy, about 5 minutes. Stir in oil and salt.

2-Add flour, a little at a time, mixing at the lowest speed until the flour has been absorbed, and the dough forms a ball. Continue on lowest speed until soft and satiny but still firm, 4 to 5 minutes. Add more flour, if necessary, to keep the dough from sticking. The dough should be soft.

3. Transfer the dough to a bowl, cover tightly with plastic wrap in the refrigerator. Let the dough rise in the refrigerator until double in bulk, 8-12 hrs. The dough can be kept for 2-3 days in the refrigerator. Simply punch down the dough as it doubles.

NOTE: I don't do steps 2 and 3 the way stated above. After the dough becomes a ball, I then knead it in the mixer for 5 minutes on high. I transfer to an oiled bowl and cover loosely with plastic wrap and allow to double in size. I then punch down and shape into loaves and put into greased pans, making sure a little oil in on the tops to avoid drying out. I cover with plastic and allow to raise. Bake at 350 for 30 minutes. ANOTHER NOTE: I usually double this recipe and make 3 loaves out of it.

Wheat bread

My friend Laura makes the best wheat bread. She showed several of her friends how to do it before she went to live on an island in the Caribbean. For reals. So this week I've been making bread from her recipe and reconnecting with the grinding wheat, kneading bread part of myself. OK, OK, I'll fess up and tell you that I use a Bosch mixer. And an electric wheat grinder. This is really good bread. My picky eater kid loves it. And Laura wants me to tell you all that she swaps out sugar for the honey because food prices are so high on Stacia and sugar is cheaper than honey. She said that it tastes the same. Like I said before, I do this in a Bosch mixer and it's really, really full. It will makes funny noises, dough will swirl over the top of the dough hook and the lid will pop off occassionally but it will be fine. And now, because I made 3 batches in 3 days, which translates into 15 loaves, I now know that I can get 15 loaves of bread out of one #10 can of my food storage wheat.

Laura's White Wheat Bread

6 C. warm water
1/3 C. honey (or same amount of sugar)
3 Tablespoons yeast

Combine above ingredients in your mixer, put the lid on and let it grow and eat and work it's magic for 15 or more minutes.

Then add:

2-3 Tablespoons dough enhancer (optional)
1/3 C. wheat gluten(optional)
2 Tablespoons salt
1/3 C. oil
14-17 C. Flour (flour ground from white wheat and some white flour)

I add the dough enhancer, wheat gluten, salt and oil and then I start adding the flour. You don't need to add dough enhance and wheat gluten if you don't have it or don't want to buy it. I think that it makes a difference but when I do it without, the bread is still yummy and light. Add half white and half wheat flour if you want a lighter loaf. I start adding the wheat flour. Laura's recipe calls for 14-17 C. but I don't think that I use that much. I add around 8 C. of the white wheat flour, then I mix. Then I start adding the white flour and mixing until the dough cleans the sides of the mixing bowl when turned onto the highest speed. Then I adjust and test by feeling the dough. If the dough is slightly tacky then I knead on highest speed for 5 minutes in the mixer. I test again after the five minutes or during to make sure that the dough is still the tackiness that I want it to be. I then turn it into an oiled bowl and flip it over so that the top is oiled also. I put plastic wrap on it loosely and allow it to rest for 10 minutes. I put oil on the counter and grease my bread pans with oil. Separate the dough into five portions, oil hands and shape the loaf by slapping the portion of dough onto the counter until flat and smooth. Then roll into a loaf shape, pinching off the bottom and the sides, lay it in the loaf pan and rub with oil to prevent drying. Cover loosely with plastic wrap or a tea towel and let rise, aproximately one hour. Bake at 350 for 30-35 minutes. Pull out of pan almost immediately onto a rack to prevent steaming in the pans. Rub the tops with butter while hot if desired.

Menus with what's on sale Oct. 28.-Nov. 3

Did I actually just write November down like it was really going to be here in less than a week? Can't be so, say it isn't so and that my life isn't racing past me.

Some smokin deals this week, especially if you will be able to hit Fry's Moonlight Madness sale tomorrow, Thursday, from 3 to 9p.m. Gala apples for .99 a 3 lb. bag. At first I read .99 and assumed that meant per pound, and thought to myself, "what's so special about that?", then I went back and saw that is was for a 3 lb. bag. That's .33 lb. kids! And there is a limit of 4 bags, so you could buy 12 lbs. of apples for $4 and put them in the fruit section of the fridge and be set for a couple of weeks.

I wanted to tell you about something. Even at risk that the world will know what a slob I am. Our drinking glasses had this film on them. The "glass" glasses and the plastic glasses. I would hand wash them and they still would look bad and the "glass" glasses had spots on them still. I just thought that I wasn't washing them good enough. Well, the lightbulb finally went on in my little head Monday while I was in the kitchen and after washing and drying the same glass a second time, holding it up to the light and it still didn't look good, I thought to myself, "those are hard water stains." DUH. I know, it takes me awhile sometimes but with most things or some things, I eventually get it. So I pulled out the vinegar and poured it into a glass, then got out more glasses and poured some in, then pulled out more glasses and poured the vinegar already in glasses into them and poured some vinegar on my wash cloth and scrubbed the outsides as well as the insides. Then after washing and drying and holding up to the window to inspect I was so happy. I now have the most sparkling looking glasses in the world. My husband and daughter both pointed out to me that I could have run vinegar through the dishwasher with most probably the same results, but oh, well. Caution: Use gloves if you have any kind of small cut on your hands. Not that I did, but if your hands are not in good shape it will hurt, and will hurt bad. Vinegar is fast becoming my most used food stuff for cleaning. I put a splash in the bottom of my canner and the pot that had the lids in it after a canning session and it removes the calcium build up and I occassionally soak a cloth around my kitchen faucet with hot vinegar to remove the hard water stains on the countertop. And on the water/ice dispenser for the fridge.
EDIT: If you do put vinegar on your granite countertops, or anything else, please rinse off thoroughly with clear water as granite is porous, as you know, and vinegar IS an acid.

CHEDDAR GARLIC BISCUITS
I don't remember if I got this from the Bisquick box or a magazine

2 C. bisquick
1/2 C. shredded cheddar cheese
sliced/diced green onion to taste
2/3 C. milk
1/4 C. butter or marg., melted
1/2 tsp. garlic powder

In a bowl, combine the biscuit mix, cheese and onion. Stir in milk until a soft dough form; stir 30 seconds longer. Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 450 degrees for 8-10 minutes or until golden brown. Combine butter and garlic powder; brush over biscuits. Serve warm.

MANDARIN SALAD
from Woman's Day, 8/8/95, I've modified it though

Dressing:
1/2 C. veg. oil
1/4 C. cider vinegar
1/4 C. sugar
1 tsp. salt

Mix in a jar or tupperware container by shaking it. Tear lettuce, slice green onions and add drained can of mandarin oranges. Toss with dressing.

If you wish to add sugared almonds put 1 cup of sliced almonds in a small pan over mdium heat with 1/3 cup of sugar. When sugar melts and starts to carmelize and almonds are very lightly toasted, put in a non plastic bowl or turn out onto parchment paper to cool. Break apart when cool. Can use in the salad if you wish. But I didn't allow for almonds in the grocery list. Or try it with cashews, pecans, walnuts sugared. Better yet, sugared pecans in the salad with some chunks of blue cheese in it! yummmmm.

Menus with what's on sale for Sept. 23- Sept. 30

Sooooo...after having spent the week caring for, or being cared for, if I can come up with a menu plan other than applesauce, toast and jello, consider yourselves lucky. Mr. B.M. (Budget Menu) said that I should make a shopping list of Advil Cold Medicine, Tylenol, cough drops, sprite and juice for this week. Silly boy.



Here goes, the brain is still fuzzier than usual so forgive me if the math doesn't add up completely. I think that it does. I tried hard to include everything and add right. And you can TOTALLY make this grocery list sing for around $67 down to $65 if you are a coupon clipper. See my sidebar for couponsense the website, not couponsense the blog. Now, I must tell you that I had breakfast tacos listed at first on one of the days, but had to pull it as it cost too much this week. The sausage was Kroger sausage at Fry's for $1.99 and Mission Flour taco tortillas at Bashas for $1.99. Pulling those items got us under the $70 mark.


Lunch
1-Tuna sandwich, grapes, hard boiled egg, Capri Sun drink
2-Ham sandwich, carrots/celery, cookie
3-Tuna sandwich, crackers, carrots/celery stix
4-Lunchmeat sandwich, carrots/celery, cookie, Capri Sun drink

Dinner
1-Chicken Broccoli rice casserole, jello.

NOTE: When I've made my version of this before, I've put the chicken in the pan, then the broc, then combined the rice, sour cream and soup and put that on top. I don't imagine it really matters the order of thing. I never add cheese on top either, so if you want to save your cheese for something else, do it here. The topping with the soup, rice gets all golden and yummy on it's own. I never add the mayo to the rice mix either, so just add a little more sour cream if you want, or not, instead of the mayo if you don't have it or are one of those people who thinks it's gross.

2-Pork Chops, applesauce, canned vegetable

3-Mac & Cheese, pineapple chunks

4-Chicken, mashed potatoes or oven roasted potatoes, canned vegetable, rolls

5-Ham Fried rice, canned vegetable. Make rice with some of the ham sandwich meat cut into dices, and some diced onion, can use some of the carrots and celery cooked in the rice as well. Season with garlic powder and soy sauce.

6-Spaghetti, salad

7-Leftovers. OR Baked potatoes with sour cream or supplement the leftovers with baked potatoes. Or might be a great time to pull the extra gr. beef or pork out of the freezer from the past two weeks.

Desserts: Pudding, Cheesecake Pie (see recipe on side bar)
You could easily make rice pudding if you wanted to, if you're not sick of rice, by adding a can of sweetened condensed milk and using this recipe http://www.cooks.com/rec/view/0,1842,147169-245203,00.html
Just make sure to do an egg count, my head is spinning, I can't count the eggs used right now.

Smart's Sunday Dinner Rolls-Carol Smart
I've made these on Mondays and Saturdays and they turned out just fine. Again do an egg count before you start. I make these without the eggs all of the time though. It's up to you.

2 C. milk
4 Tbls shortening or butter

Put these in a glass bowl in the microwave for 1-2 minutes or to just before a boil(scald). Let cool to lukewarm.

In another bowl add 1 T. yeast, 1/4 C. warm water and 1 tsp. sugar. Let it grow.
Then after 10-20 minutes or before it grows over the bowl, put it in the mixer with the milk and melted butter.

Add:
2 eggs, beaten
3 Tbls. sugar
2 tsp. salt

Add 2 C. flour and beat thoroughly. Gradually add enough flour to make a dough that can be stirred with a spoon. Knead. (You want enough flour in this so that you have a smooth elastic dough with only a slight amount of tackiness to it. Grease a bowl and the top of dough, cover and let rise to double. Make 24 rolls (when I make them I have enough to fill a 15x10 inch baking sheet) and let double again. I usually put a little oil on tops or it's on my hands when I'm shaping them to keep them from drying out. I put saran wrap on top and to let them raise. Bake at 350 till golden brown. Aprox. 15-20 minutes. Keep a close eye on them in the oven.
