Egg rolls

Egg Rolls I made egg rolls last night for dinner out of the Pillsbury crescent rolls. They were lacking something, either they needed more garlic salt or some ginger or soy sauce, I don't know. I'm not gonna lie, they were a little weird. But in a, "I am so going to make them again" kind of way.
My daughter liked them. I liked them. I don't think the male folk in the family did. Here's what I did:

I sauteed off a bag of cabbage and carrot cole slaw in butter and olive oil, sprinkled with Lawry's garlic salt and added some sliced scallions and shallot. I would have used some bean sprouts but couldn't find any fresh in the grocery store. For one tube of crescent rolls, you will probably only need a half of a package of slaw. Less if you're using bean sprouts. When soft I then let the cabbage cool completely. On the second try at this, I put some uncooked sliced scallions on before bakingI unrolled the crescent rolls and separated them into the rectangle shape and pressed the other perforations together. I put some chopped cooked shrimp on the rectange, then the cooked cabbage and rolled them up lengthwise and sealed the edges and the ends with my fingers. I baked them according to the crescent roll baking instructions. Made a nice side to our basil Tilapia and ham fried rice.

When I make them next time I will season the shrimp, or whatever protein I use, and the cabbage more with salt or soy sauce or ginger. The crescent roll is so bland and thicker than a normal egg roll wrap that the flavor of the egg roll needs to come from within.

Apple sausage bread dressing



Apple Sausage bread dressing or stuffing

1 lb. of breakfast sausage or italian sweet sausage, cooked and crumbled
2-3 shallots or a half onion, finely diced
2-3 ribs of celery, diced
2-3 apples, peeled, cored and diced
1 stick butter
Aproximately 2 cans of vegetable or chicken broth
Sage, if desired
Aproximately 2 boxes of Mrs. Cubbinson's seasoned breadcrumbs or cubes
salt and pepper
melted butter or olive oil

Put the bread cubes in a bowl. You decide by how many people you are having if you use one or two boxes. We like it leftover so I use two boxes. Put the butter or margerine in a skillet and sautee the celery, onion and apple until soft. Pour the vegetables on top on the bread cubes. Add a can of broth and let it sit for a few minutes. Stir to absorb the liquid into the dried bread cubes. Add more broth or water for desired consistency. Put into a greased casserole dish. Top with a little melted butter or some olive oil. Bake, uncovered aproximately 30 minutes at 350 until golden on top.
NOTE: This year, 2010, I was lazy and didn't peel, core and dice apples so I took my kitchen shears and cut up my dried food storage apples, then rehydrated them with hot water for 15 minutes. No one knew the difference in the stuffing.

My family likes it this way, however you could add:
sauteed mushrooms
dried cranberries
cooked diced giblets, ew
wild rice mix, like Uncle Ben's or Rice A Roni
diced cooked bacon or panceta
raisins or other dried fruit like apricots
egg, as a binder
turkey stock from cooking the neck and giblets instead of canned broth

Twice-Baked Maple-Pecan Sweet Potatoes

Twice-Baked Maple-Pecan Sweet Potatoes

Ingredients
6 medium sweet potatoes (4 lb0, scrubbed
3 Tbsp butter
2 Tbsp pure maple syrup or pancake syrup
1/2 tsp salt
1/4 tsp pepper
2 slices bacon, cooked crisp, crumbled
3 Tbsp pecans, toasted and chopped
Garnish: snipped chives or slice scallions

Preparation
1. Heat oven to 400 degrees F. Prick each potato once with a fork. Bake on a rimmed baking sheet 45-55 minutes until soft. 2. When cool enough to handle, cut potatoes in half lengthwise. Scoop insides into a medium bowl. Mash with next 4 ingredients until smooth. Spoon back into skin. 3. To serve: Heat oven to 350 degrees F. Line baking sheet with foil or parchment: coat foil with nonstick spray. Place stuffed potatoes on sheet; sprinkle with bacon and pecans. Bake uncovered 15 minutes or until hot. Garnish. Planning Tip: Pecans can be toasted and chopped up to 1 week ahead. Bag; store at room temperature. Prepare potatoes through Step 2 up to 2 days ahead. Refrigerate covered. Bring to room temperature before reheating (Step 3).

Corn Pudding

Corn Pudding
from Soozy

1 box Jiffy cornbread mix
1 can whole kernal corn
1 can creamstyle corn
2 eggs beaten
1 cup cream
1 stick butter, melted
salt and pepper to taste

Mix together (including corn liquid). Put in an 8x8 pan and bake for 1 hr. at 350 degrees F.

I usually double this and put in a 13x9 pan. You can also add diced green chilies if you'd like.

Roasted Butternut squash

Roasted Butternut squash
Turn oven on to 400 Degrees FCut in half carefully, don't lose a digit. Cut off the stem end and the bottom end so that you have a steady squash for peeling and slicing. You really do need to be careful here, the squash is quite hard to cut and peel, and you could quite easily lose control. Don't have any small children at the counter when you do this.Peel carefully, I use a Chef's knife. The big intimidating one. You could try using a peeler, but I'm not that patient.DicePut on a sheet pan and drizzle with Olive oil, then add salt and pepper. Don't look at my gross/grody baking sheet. That's why I usually do fuzzy close-ups. Gorgeous color. Toss the dices around so that all are coated in the Olive Oil and are seasoned nicely. Roast at 400 degrees for about 20-30 minutes.

It comes out all carmelly, sweet and delish. Yum. My favorite new thing to do.

Onion Strings

Onion Strings
From Pioneer Woman Cooks, pg. 92-93
Ree Drummond

1 large onion
2 cups buttermilk (if you don't have any buttermilk, add 1 tablespoon distilled white vinegar to just under 1 cup of low fat milk)
2 cups all-purpose flour
1 scant tablespoon salt (I found this too salty for my taste)
Plenty of black pepper
1/4 to 1/2 teaspoon cayenne pepper
Canola oil for frying

Begin by peeling the onion and slicing very thinly. Separate the onion slices and place them in a shallow dish. Pour buttermilk over the top. Press the onions down so they're submerged as much as possible and let them soak on the counter for at least an hour. If necessary, stir them around a bit halfway through the soaking process. In a bowl, combine the flour, salt, black pepper, and cayenne. Pour 1 to 2 quarts canola oil in a pot or Dutch oven. Heat to 375 degrees or until a pinch of flour sizzles when sprinkled over the pan. Using tongs, remove a handful of onions from the buttermilk and immediately dunk into the flour mixture. Coat the onions in the flour mixture, then tap them on the inside of the bowl to shake off the excess. Plunge the onions into the hot oil. With a spoon, fiddle with them a bit just to break them up. And watch them! They'll be ready to remove from the oil in no time flat. When they're golden brown (this should take under a minut), remove them from the oil and place on a paper towel lined plate. Repeat with the remaining onion slices and serve immediately. Pile these on top of a juicy grilled hamburger--to die for!

Menu with what's on sale for week of Apr. 21-Apr. 26 and more on the Fry's give away

Don't forget to go two posts down and leave your name and email for the Fry's Gift Card give away.

At first glance it doesn't look like a killer sales week but I put a lot of extras in the menu this week and didn't have to revamp it once after the first rough copy. So add a package of lunch meat or shave off some money by removing the soda, pudding cups, ice cream and fruit snacks to save money this week. Or switch out some of the fruit and buy another Suddenly Salad mix for a pasta salad lunch instead of sandwiches one day. I did forget a few items so started out a little cheaper than this final total, but I still decided to keep the luxury items like the fruit snacks, juice, pop, pudding cups. You can cut them out if you want to save lots of money this week.

3-Hamburgers, buns, Suddenly salad pasta salad. If the ground round is too dry or lean, add a little olive oil to the meat before shaping into patties. Or and egg?????? Would that work????

4-Chicken Enchilada Casserole, chips and salsa, green salad. See side bar for recipe but see below for explanation.

5-Grilled cheese sandwich

6-Stuffed green peppers, roasted cauliflower, jello. See below for link to recipe for Roasted Cauliflower. Make stuffed peppers by using the halves, cook slightly in microwave, used browned gr. beef, tomato sauce, leftover cooked brown rice from meal idea #1, season with garlic salt or basil and put into halves, add a little cheese if you want, bake until hot. I'm not sure if you'll need all three cans of tomato sauce, so open them one at a time to see how tomato-ee and juicy you will want the rice to be. OK?

7-Leftovers or Hamburger Helper. Add .88 and buy a Hamburger Helper if that is what you want. You should have enough ground beef for it and should have enough lettuce, cucumbers and tomatoes for a green salad to go with it.

Dessert:

Beef and Broccoli
This is how I would do it. Slice the meat thin and fry on hot heat fast, don't overcook. The meat should still be juicy inside. Take out of pan and put on a plate. Either fry the broccoli or par boil or steam it. Put the beef broth in the fry pan and heat, season with garlic salt, ground ginger, soy sauce if you want. Make a slurry of cornstarch and add to the beef broth and let thicken. Add the broccoli and meat back to the pan.


Enchilada Casserole
The recipe to this is at the left side. I allowed for an 8x8 size with the groceries listed. So what I would do is to cook two or three chicken breasts and dice the meat once it's cooled. Then I would take one can of cream of chicken or cream of mushroom soup and put in a bowl. I would add some milk, maybe 1/4-1/2 soup can of milk, a couple of spoonfulls of sour cream and some green salsa or green enchilada sauce if I had it. If you don't, then add a spoon full or two of the salsa you have. Tear a flour tortilla into bite size pieces and put in an 8x8 inch pan. Add one or two tortillas, however many you want, add the chicken, add some sauce, continue layering with tortillas, chicken and sauce until out of chicken and sauce. Top with cheese and bake at 350 until hot and bubbly but don't burn the cheese. I sometimes garnish with diced tomato, sliced olives and crushed tortilla chips. My son thinks this is dip and will eat it by scooping it with tortilla chips. That's yummy also.

To double recipe, add a little more chicken and another can of soup and put in a 9x13 pan. You should have enough sour cream, tortillas and salsa.

Sweet Vinaigrette
1/2 C. veg. oil
1/4 C. cider vinegar
1/4 C. sugar
1 tsp. salt

whisk together or shake together in a jar or tupperware container with a tight fitting lid.

Cheesy Potatoes

Cheesy Potatoes

1 bag (30 oz.) of shredded hash browns
1 can of cream of celery soup
1 can of cream of mushroom soup
2 cups (1 pint) of sour cream
4 cups of shredded cheddar cheese

Mix above ingredients together keeping 2 cups of cheese out for the topping. Transfer to a 9x13 pan that you've sprayed with nonstick cooking spray, top with remaining cheese, cook uncovered at 350 degrees until internal temperature is 140 degrees, approximately 55-60 minutes(if potatoes were frozen, if not, then much less time, check often).

*Add ham to make a Potato and Ham casserole

Twice Baked Potatoes

Last year I made these to have for dinner Christmas day. I made up the whole bag of potatoes and froze them since my kids love twice baked potatoes. They didn't last that long but for as long as they did, my kids could pull a potato out of the freezer and pop it into the microwave for a quick snack or lunch during Winter break. So I'm thinking this year that I may make the twice baked potatoes a week ahead, freeze and if I can keep people from eating them before Christmas, my potatoes will be done and all I will have to do is warm them in the microwave or oven for Christmas dinner.

Twice baked potatoes

Potatoes, one per person (?)
sour cream
butter
chopped cooked bacon or bacon pieces
chopped green onion
shredded cheddar
garlic salt if desired
salt and pepper

Wash potatoes and pierce with a fork or knife and place uncovered on a baking sheet. Bake potatoes in the oven at 350 for about an hour depending on their size. While still hot but cool enough to handle, slice a part of the top of the potato off, scoop out flesh into a bowl and leave shells intact on baking sheet. Add some butter, milk, sour cream to flesh and mash with a masher. When desired consistency add bacon, cheese and green onion and salt and pepper. Fill into shells, top with more cheese and bake until hot or until cheese melts if they are already hot. You can freeze before baking if you want.

If you want to, instead of a whole potato for one serving, you could slice the potato in half after baking making two servings from one potato. Do this if the potatoes are big or if there are a lot of children you may be serving.

Mashed Potatoes

However. If you don't have a food mill you have my permission to use a potato masher. We happen to like rustic style lumpy mashed potatoes over here and that's what I'll be using come turkey day.

Mashed potatoes can be put in the crockpot on low to keep warm or you can put the covered bowl over a pot of water that has come to the boiling point(turn heat to low or off) for about an hour. Or put hot foods in an ice chest to hold until dinner. I wouldn't do this for longer than an hour or two though.

2-Pork roast, canned vegetable of your choice, bread dressing, see http://allrecipes.com/Recipe/Celery-Stuffing/Detail.aspx for recipe for bread dressing. Cut the pork loin into 3 pieces (or more?). One for the roast, one for the strips for stir fry and one to freeze for next week or the week after. Leftover roasted pork can be used for sandwiches. I did not put an onion down on the grocery list for the bread dressing, so if you need onion in this dish, add it to your grocery list.

3-Spinach Salad, french bread. See recipe below for Spinach Salad.

4-Pork stir fry with Ramen noodles. Use pork strips, broccoli and mushrooms for stir fry.

5-Taco Soup, corn muffins. Tortilla chips, sour cream and avocados for toppers. See recipe below for the Taco Soup

6-Bacon and tomato sandwiches. Add $1.28 to the week's food budget and buy some Kroger Value french fries to go with it if desired. Peach Raspberry Crisp for dessert. See side bar to take you to the entry that has the link for the recipe.

7-Spaghetti, sauce, garlic bread

Spinach Salad (Beth C., who gave it to Ginna B., who gave it to me)

Fresh spinach, washed
shredded or thinly sliced cabbage or some cole slaw mix
sliced strawberries
diced apple
Brianna's brand poppy seed dressing
(halved grapes, but the budget did not allow for grapes this time)
(Toasted amaranth and cooked quinoa are also added as are sugared cashews but I did not allow for them in the budget this time. Also adding cooked chicken or pork is good.)



Taco Soup (Kathy G., who gave it to Margie M., who gave it to me)

1 lb. of ground beef or ground turkey
1 small to medium onion, diced
1 can of corn with liquid (15 oz.)
1 can of black beans or pinto beans, with liquid (15 oz.)
1 can of diced tomatoes (28 oz.), or two smaller cans (15 oz.)
2 cans of tomato sauce (8 oz. each)
1 C. of water
1 package of taco seasoning

Brown ground beef. Drain grease. Sautee onion or cook in a bowl with a small amount of olive oil in it in the microwave for 30 seconds. Combine everything in a pot, heat until hot. Serve with toppers.

Toppers:
Shredded cheddar or Monterrey jack cheese
jalapenos, pickled or fresh
sour cream
sliced olives
sliced or diced avocado
sliced green onion
tortilla chips or corn tortilla strips fried in oil and salted. Or you can bake them.

The Utah peaches at Bashas. My friend was telling me that her friend takes the sliced, peeled peaches and puts them in a ziplock baggie. Then she puts that in a pie plate and freezes it so that it forms to the pan form. She then takes out the pan once the peaches are frozen and stacks them. Then when she wants peach pie, she takes out a bag of pie form peaches and plops them into a pie crust.

3-Hot dogs, baked beans. The recipe for the baked beans on Pioneer Woman Cooks is below. I allowed for a half recipe for the beans. Otherwise it serves 18. So if you want to make the full recipe and use some for labor day, that would work. I allowed for 3 fifteen ounce cans of Pork & Beans in the grocery list.


4-Labor Day Menu. Spareribs, Potato Salad, Celery and carrots, Potato chips and dip, watermelon. If enough eggs will be left for the rest of the week, make some deviled eggs. Cheesecake pie for dessert. Cheesecake pie recipe below. If you have leftover cream cheese from bagels this week, a good dip can be made creaming the cheese, adding some milk to make creamier and some garlic salt to taste.


5-Leftovers.


6-Southwestern Chicken Caesar salad. A couple of options here. A recipe http://www.recipezaar.com/southwestern-chicken-caesar-salad-wchipotle-dressing-380694 or make your own dressing by adding a couple of dashes of green tabasco to bottled caesar dressing. You could try the red kind if that's all you have. Or let's go crazy and even say to try a small amount of taco seasoning. Try just a little in a small amount of dressing first to see if you'll like it. Or buy the Caesar salad kits on sale at Fry's this week. Making your own would be more cost effective though. If you choose to use the recipe, use one cob of corn for this salad, if you decide to buy some black beans for it, you will have to allow for extra in the food budget.


7-Grilled chicken sandwiches and corn on the cob. Here's what my hubby does. He bakes the chicken breasts in the oven at 350 or lower temp(I'll have to ask him now which it is) until they are almost done. Still inedible though. He then slices the breasts in half, so that you now have double the amount of chicken breasts, but thinner, and easier to eat as a sandwich. A really good $ stretcher idea for BBQ's and parties. He then puts BBQ sauce on them and BBQ's until they are done, not very long. Ice cream for dessert. If you want to use the leg quarters instead for this night, then cook the meat, take off the bone, and use as BBQ chicken sandwiches.



Quick Southern-Style Baked Beans

recipe by Pam Anderson
serves up to 18
as posted by the Pioneer Woman Cooks

8 slices bacon, halved
1 medium onion, small dice
1/2 medium green pepper, small dice
3 large cans(28 oz. each), Pork and Beans (or 6 small cans)
3/4 C. BBQ sauce
1/2 C. brown sugar
1/4 C. distilled or cider vinegar
2 tsp. dry mustard or 2 T. Dijon mustard

Adjust oven rack to lower-middle position and heat oven to 325 degrees. Fry bacon in large, deep saute pan skillet until bacon has partially cooked and has released about 1/4 C. drippings. Remove bacon from pan and drain on paper towels. Add onions and peppers to drippings in pan and saute until tender, about 5 minutes. Add beans and remaining ingredients and bring to a simmer(If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients. Pour flavored beans into a greased 13-by 9-inch (or similar size) overproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to slightly thicken.

You may want to halve this recipe and only use 3 small cans of P&B's. Adjust the other ingredients.


Spareribs

3 lbs. spareribs
2 T. butter
1 Onion, medium, diced
1 clove garlic or comparable amount of garlic powder
1 C. celery, chopped
3/4 C. water
1 C. ketchup
2 T. vinegar
2 T. lemon juice
2 T. worcestershire sauce
2 T. brown sugar
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper

Melt butter; add onion, and cook until translucent, add remaining ingredients and cook 20 minutes. Enough sauce for 3 lbs. of meat. Simmer spareribs in sauce for 3-4 hours. (my mom always cut them into separate ribs or chunks of 2-3 ribs before cooking in the sauce.)



Cheesecake Pie (Angela N.)

2 bricks cream cheese, room temperature
2/3 C. heavy cream
2/3 C. powdered sugar
1 grahm cracker or shortbread or oreo pie crust

Mix cheese, cream (or less milk if you don't want to buy cream, start with 1/4 C.), powdered sugar, with an electric mixer until creamy. Pour into a cracker crust, refridgerate four hours. Serve with canned pie filling or fruit jam. Strawberry or Raspberry freezer jam is an excellent topping for this.

Funeral Potatoes


I know, the photo doesn't go with the title. I've decided to go back to the old posts that had recipes in them and clean them up to just be one recipe, so that when you click a recipe you don't have beef in the chicken category and candy in the chicken category and so on. For the Funeral Potatoes recipe I had originally put down a website and when I go to that now nothing happens, so I found the recipe that I think is close to the one my mom used to make. I also have one that the hubs uses for caterings and the ward uses for ward dinners that I will post in another post.

32 oz bag of frozen shredded hash browns

2(10.3/4 oz.) cans cream of chicken soup

2 Cups sour cream

1 1/2 C grated cheddar cheese

1/2 C. melted butter or margarine

1/2 C. chopped onion

2 C. finely crushed corn flakes

2 T. butter or margarine melted

Grease 9x18 baking dish and preheat oven to 350. In a large bowl combine soups, sour cream, cheese, onion, and the 1/2 cup of melted butter. Gently fold hash browns into mixture. Pour mixture into pan. Combine crusted corn flakes and the 2 Tbs. of melted butter and sprinkle on top of potato mixture. Bake for 30 minutes.

*If you want to, you can use cubed potatoes instead of hash browns but you will need to increase baking time to 55 minutes.

*Add leftover ham if you want to make this into a Potato and Ham casserole
