12 rhodes Dinner Rolls, thawed but still cold

zest from 2 whole lemons

1/2 C. sugar

1/4 C. butter, melted


Citrus Glaze:

1 C. powdered sugar

1 T. butter, melted

2 T. fresh lemon juice


Mix lemon zest with sugar. Cut rolls in half and place in a 12-inch sprayed deep dish pizza pan or 9x13-inch sprayed baking pan. Drizzle 1/4 C. melted butter over rolls. sprinkle with lemon zest/sugar mixture, reserving 1/2 of mixture to sprinkle on just before baking. Cover with sprayed plastic wrap. Let rise until double in size. Remove wrap. Sprinkle on remaining mixture. Bake at 350 degrees F 20-25 minutes. Remove immediately from pan and place on cooling rack. Combine glaze ingredients and mix well. Drizzle over pull-aparts.

Homemade doughnuts

I am loving the convenience lately anyway of refrigerated biscuit dough in the tubes. When I made the Monkey Bread I was pleasantly surprised at how it tasted like a yeast dough when cooked in that way. I hope to try this soon and get a few photos of my own up with this post.

Perfect for fall weather and Halloween time, can you imagine a cup of hot spiced cider with this, or a even a cold glass of apple juice, oh yeah. This is the simple recipe in my own words:

2 tubes of refrigerated biscuits
oil for frying
sugar for coating afterwards Line up the biscuits, use a pop bottle cap to cut out the center.Fry doughnuts and centers in hot oil, being careful not to start a fire or splash wicked hot grease on yourself. When golden brown on both sides, transfer to a paper towel lined plate, and while still hot put in a brown grocery bag with sugar and/or sugar and cinnamon and shake until coated. Or, if you would prefer to frost or glaze your donuts, omit the sugar coating step and make a simple glaze.Above photo shows a plain glaze made out of powdered sugar, vanilla, water and a touch of butter. I think that I would have to make a chocolate glaze to top mine though. With sprinkles on top.
Above, chocolate glaze, no sprinkles. These turned out small because they were from the smaller biscuits. We liked them a lot. They taste different than a bakery donut, but we liked them enough to do it again. They fry up quick, it maybe took me 30 minutes from start to finish. That included making two different kinds of glazes and glazing them. And watching part of "the Price is Right"!

Creme Brule French Toast

For a brunch, holiday or if you're LDS, a Conference morning breakfast. My friend Tanya gave us this recipe and I have not tried it yet. NOTE: Obviously, since I have a picture of it now, I have tried it since I first wrote this. I found it easy and my family thought it was delicious. It's going in the file and will be used for special occassions.

Creme Brule French Toast
From my friend Tanya

1/2 C. unsalted butter
1 C. packed brown sugar
2 T. corn syrup
Bread, sliced to cover butter mixture (5-6 slices)
5 large eggs
1 1/2 C half and half
1 tsp. vanilla
1/4 tsp. salt

In a saucepan, melt butter, brown sugar, and corn syrup. Pour into a 9x13 glass baking dish. Arrange bread pieces on top. Beat eggs, half and half, vanilla and salt. Pour egg mixture over the bread. Cover and chill overnight in refrigerator. The next morning, bake uncovered @ 350 degrees for 34-40 minutes.

Golden brown and yummy---enjoy.

Monkey bread

I wasn't fast enough to get a photo of this before it began to be eaten. I made this this morning. So good. And I used cheap Bashas' Food Club brand tube biscuits at .66 each. Worked out marvelous. The husband got this recipe from our friend Tom. It is now afternoon and all of the Monkey bread is gonzo. Tom says that making the cream cheese icing below and putting some on top of the bread while it is still warm is yummy, and then making sure you have some for dipping is necessary. I didn't know cream cheese icing was an option when I made this so we had it without. I think that we consumed enough calories without it.

for 8 people
4 tubes Biscuits (refridgerated)
3/4 C. granulated sugar
3/4 C additional granulated sugar
1/3 C. brown sugar
1/4 C. evaporated milk
1 C. butter
1.5 C. chopped pecans (I made it without nuts)
2 tsp. cinnamon

Preheat oven to 350 degrees F. Cut biscuits into quarters. The biscuits I used were small so I cut them into thirds.. Combine 3/4 C. white sugar with the cinnamon. Roll each biscuit quater in the cinnamon/sugar mixture. In a cake pan or baking dish, (I used two bread pans), layer the biscuits and the pecans. In a saucepan, slowly bring milk, remaining 3/4 C. white sugar, brown sugar, and butter to a boil. Remove from heat. Pour over biscuits in the pan. Bake for 30 minutes or until it is cooked to your liking! Flip pan over onto a serving dish and serve right away! Voila!

Variations:

Chopped almonds instead
Layer apple chunks and walnuts with biscuits
Layer biscuits with strawberry jam and fresh strawberry slices, omit cinnamon
Apricot jam
Raspberry jam and mixed berries

Icing
1/2 pound cream cheese (8 oz.)
1/2 pound butter (1 C.)
1 pound powdered sugar (4 C.)
1 tsp. vanilla extract
t tsp. lemon juice

Allow cream cheese and butter to get to room temperature. Beat butter and cream cheese together in a large bowl with a mixer. Slowly add in the powdered sugar. Mix for 12 minutes. Do not mix less than that. When almost done, add in the extract and lemon juice.

Menu with what's on sale for the week of Apr. 7-Apr. 13

You may not want to drive to six stores this week. It's entirely up to you and I totally understand if you rebel and say "enough with the madness, I'm not going to do it this week." I just try to offer you some insight as to what's available and that you can feed your family healthy and interesting food for under $100/week. This week had some really good and cost effective combinations if you are willing to store hop. And if you're not willing to store hop, that's okay too, because you will still save $ if you shop and buy only what's on sale. That is the key. That and using coupons and never paying more than $2/lb. for meat. So go forth and conquer. Conquer the grocery store, that is.

Egg-In-The-Hole

Egg-In-The-Hole
from The Pioneer Woman Cooks cookbook, pg. 46-47

Siced bread, such as white, whole wheat, sourdough
Butter
Large eggs
salt
black pepper

Take the bread slice and use a biscuit cutter to take a hole out of the middle of the bread. Heat 2-3 tablespoons of butter in a skillet over medium-low heat, then place the bread in the skillet and allow it to soak up the butter. After 1 minute, creack a large egg into the hole. Sprinkle with salt and pepper and cook for another minute. Throw another tablespoon of butter into the pan. With a spatual, flip to the other side. Move the bread around in the skillet a bit, allowing it to soak in the butter. Sprinkle with salt and pepper and cook on the second side until the egg is the desired doneness. I love the outer edges of theyolk to be barely set, with the center runny.

Menus with what's on sale Oct. 7- Oct. 13

So. Yesterday afternoon I sit down to write out some of the recipes that I wanted to and to perhaps work on the Budget Menu after that and I get this urgent message from my son as I let the message machine pop on instead of answering the phone. Can I just ask you this? How does someone forget to bring a speedo (Ew.) to a swim meet? So I drop everything and run and find it (on the bedroom floor, big surprise, but by then I was just so happy to have found it fast), pick it up with only my forefinger and thumb without having to look at it too much and put it in a bag, throw the after swim meet pizza party cookies into a cooler so they won't turn into molten lava, then throw the cooler into the car and race to the pool to give him his swimsuit before the swim meet started. I used to be so smug about this sort of thing. People who had children who would forget to bring their swimsuit to a swim practice or a swim meet. Not any more.

Feel free to shave off what you can. I was a little limited as the Albertson's deal I had to buy in increments of 6. Also, especially with Albertsons, using coupons I bet that you can clip at least $5 off of this total, if not more.

Otherwise they will get tough like erasers.

5-Chicken enchiladas, frozen vegetable. Use a can of enchilada sauce, chicken quarters meat, cheese, flour tortillas.

6-Ground beef gravy over mashed potatoes, steamed broccoli. Brown ground london broil, season to taste with garlic powder or salt, salt and pepper if desired, add can of cr. of mushroom soup, can of water, or almost a can of water and stir until smooth and heat through. You can add some worcestershire sauce if you have it. Put on mashed potatoes.

7-Pizza, frozen vegetable

Possible dessert ideas this week could be snickerdoodles. Apple pie if you buy more apples and apple pie enchiladas if you buy more apples or apple pie filling and more flour tortillas.

Apple Pie Enchiladas

I just think that this is a nifty idea!

1 (21 oz) can apple pie filling
6 (6 inch) flour tortillas
ground cinnamon
1/2 C. granulated sugar
1/2 C. packed brown sugar
1/2 C. water
1/3 C. butter or margarine
whipped cream or vanilla ice cream
1. spoon fruit filling evenly down the center of each tortilla, and sprinkle with cinnamon. roll up each tortilla, and place seam side down in baking dish.
2. Combine both sugars, water, and butter in a saucepan. Bring to a boil over medium heat, reduce heat, and simmer, stirring constantly for 3 minutes. Pour sauce over enchiladas and let stand for 30 minutes.
3. Preheat oven to 350 degrees. Bake for 20 minutes. Serve warm with whipped cream and/or ice cream. Can drizzle excess sauce over ice cream. Makes 6 servings.

This menu has been a booger to figure out. And if it seems high, it is, but there are some high end ingredients in here. Just hope that it's all here.
