12 rhodes Dinner Rolls, thawed but still cold

zest from 2 whole lemons

1/2 C. sugar

1/4 C. butter, melted


Citrus Glaze:

1 C. powdered sugar

1 T. butter, melted

2 T. fresh lemon juice


Mix lemon zest with sugar. Cut rolls in half and place in a 12-inch sprayed deep dish pizza pan or 9x13-inch sprayed baking pan. Drizzle 1/4 C. melted butter over rolls. sprinkle with lemon zest/sugar mixture, reserving 1/2 of mixture to sprinkle on just before baking. Cover with sprayed plastic wrap. Let rise until double in size. Remove wrap. Sprinkle on remaining mixture. Bake at 350 degrees F 20-25 minutes. Remove immediately from pan and place on cooling rack. Combine glaze ingredients and mix well. Drizzle over pull-aparts.

Strawberries Romanov

With Strawberries and sour cream both on sale this week, this would be a good thing to have for a lazy Sunday afternoon snack or for a Fourth of July party. If you've never tried this before, give it a try. My picky kid has loved it since he was little. It is quite simply, whole washed and dried strawberries. Place the sour cream in a bowl and put some brown sugar in another bowl. You take a strawberry, dip in in the sour cream and then in the brown sugar and then eat. Yum!

4th of July BBQ for $30

Or there abouts. Feed 15 people for aproximately $30.

Add a strawberry Jello/Whipped cream salad for $3.02
for a total of $30.49

Strawberry Jello/Whipped cream salad
Sliced strawberries (Fry's, .77)
Jello, 6 oz. (Albertson's, .75)
1 1/2 C. hot water
Cool whip, two tubs (Albertson's, .75 ea, $1.50 total)
2 C. vanilla ice cream (Dreyer's ice cream, already have some for brownies ala mode, Basha's, 2/$2.50)

Add hot water to Jello and mix until dissolved. Add 2 C. of vanilla ice cream and stir. Fold in or gently whisk in the Cool Whip after the water has cooled down. Add strawberries, chill for 3-4 hrs. Keep inside or on ice in this heat.

Cherry Cobbler

This is a recipe that I took back home with me from Idaho a week ago. I just made it today, it's so yummy. Would be great to make for Father's day.

Cherry Cobbler
from Becky and Mike who got it from Nora

2 cans of cherry pie filling
1 yellow cake mix
1 stick of butter or margerine

Empty the cherry pie filling into a 9x13 baking dish. Microwave the butter in a big bowl until melted. Add the cake mix and mix well. Add the crumb mixture to the top of the cherries. Bake for 20-25 minutes at 350 until bubbly and golden or light brown.

Vegan Brownies

Some of you may be thinking "EWWWWWWW...Vegan...." right now. My daughter made these today because she has a friend who is a vegan, and I was pleasantly surprised. They are really fudgey and good. They are everything a regular brownie is, minus the eggs. Yum. This would also be a great recipe to keep in your food storage files.

Vegan Brownies

2 C. unbleached all-purpose flour
2 C. white sugar
3/4 C. unsweetened cocoa powder
1 tsp. baking powder
1 tsp salt
1 C. water
1 C. vegetable oil
1 tsp. vanilla extract

Preheat the oven to 350 degrees F (175 degrees C).

In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla, mix until well blended. Spread evenly in a 9x13 inch baking pan.

Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

Frozen whipped cream



I realize that white on white isn't the best for photos.


Just a quick tidbit. My mom used to freeze heavy cream in the carton and she also used to freeze whipped cream in spoonfuls and take them out to defrost and use later. So I couldn't remember if I'd done it before and had a boatload of whipped cream leftover from one of hubby's caterings. So I put a sheet of parchment on a baking sheet and put dollops of cream on it and then froze them. When they were solid (overnight) I then peeled them off of the parchment or waxed paper and put them in a ziplock bag.
I've been taking them out and putting them in a bowl and defrosting either in the microwave or just on the counter and then using them in my hot chocolate or homemade warm delights. Works great. Leave it frozen on the warm delight and it kind of tastes like ice cream.

Pumpkin Gingersnap Ice Cream

Pumpkin Gingersnap Ice Cream

1 can (15 oz.) 100% pure pumpkin
1 tsp. ground ginger
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves
1 quart preminum vanilla ice cream
16 gingersnap cookies, coarsely crumbled

Heat pumpkin, ginger, cinnamon and cloves in a medium saucepan, stirring to blend flavors, about 5 minutes. Trasfer to shallow pan; freeze to cool quickly. Soften ice cream (15 seconds to 30 seconds on high power in the microwave). Turn into a large bowl; stir in pumpking puree until nearly incorporated. Crumble 16 gingersnaps into ice cream and continue to fold until incorporated. Freeze until ready to serve. NOTE: The ice cream that I normally buy is not a full quart any more.

Homemade doughnuts

I am loving the convenience lately anyway of refrigerated biscuit dough in the tubes. When I made the Monkey Bread I was pleasantly surprised at how it tasted like a yeast dough when cooked in that way. I hope to try this soon and get a few photos of my own up with this post.

Perfect for fall weather and Halloween time, can you imagine a cup of hot spiced cider with this, or a even a cold glass of apple juice, oh yeah. This is the simple recipe in my own words:

2 tubes of refrigerated biscuits
oil for frying
sugar for coating afterwards Line up the biscuits, use a pop bottle cap to cut out the center.Fry doughnuts and centers in hot oil, being careful not to start a fire or splash wicked hot grease on yourself. When golden brown on both sides, transfer to a paper towel lined plate, and while still hot put in a brown grocery bag with sugar and/or sugar and cinnamon and shake until coated. Or, if you would prefer to frost or glaze your donuts, omit the sugar coating step and make a simple glaze.Above photo shows a plain glaze made out of powdered sugar, vanilla, water and a touch of butter. I think that I would have to make a chocolate glaze to top mine though. With sprinkles on top.
Above, chocolate glaze, no sprinkles. These turned out small because they were from the smaller biscuits. We liked them a lot. They taste different than a bakery donut, but we liked them enough to do it again. They fry up quick, it maybe took me 30 minutes from start to finish. That included making two different kinds of glazes and glazing them. And watching part of "the Price is Right"!

4 Layer Chocolate Pudding Dessert



4 Layer Chocolate Pudding Dessert

Mix Together:
1 C. flour
1 C. chopped nut
1/2 C. butter

Press on bottom of cake pan (9x13). Bake 10 to 12 minutes at 350 degrees.



Layer #2
Combine:
8 oz. cream cheese
1 C. powdered sugar
9 oz. Cool whip

Put on first layer when it is cool.

Layer #3
1 large or 2 small packages of instant chocolate pudding
2 C. milk

Put on the top of second layer.

Layer #4
Cover third layer with whip cream or Cool Whip.

Chill until serving time.


I must mention that I've been using real whipped cream for this. Mainly b/c when I went to buy Cool whip that Easter weekend there wasn't any to be found. Unless you call LITE cool whip, cool whip, which I don't. So I bought the large container of heavy cream and whipped my own. Takes 2-3 minutes. Easy Peezy. Anyway. YUMMY with real whipped cream.

Pumpkin Gingerbread Trifle

Check out this blog for Pumpkin Gingerbread Trifle. This recipe looks interesting and yummy. I haven't tried it, but it may be something new and good for the fall, Halloween or Thanksgiving for someone out there. And I had a thought. If you didn't have time or want to make the gingerbread, crushed store bought gingersnaps (we like Bashas Food Club brand the best) might make an interesting layer between the pumpkin mousse. What do you think? Would give flavor as well as crunch. Depending on how long it sat in the mousse. Could work. Could work nicely.

Menus with what's on sale Oct. 7- Oct. 13

So. Yesterday afternoon I sit down to write out some of the recipes that I wanted to and to perhaps work on the Budget Menu after that and I get this urgent message from my son as I let the message machine pop on instead of answering the phone. Can I just ask you this? How does someone forget to bring a speedo (Ew.) to a swim meet? So I drop everything and run and find it (on the bedroom floor, big surprise, but by then I was just so happy to have found it fast), pick it up with only my forefinger and thumb without having to look at it too much and put it in a bag, throw the after swim meet pizza party cookies into a cooler so they won't turn into molten lava, then throw the cooler into the car and race to the pool to give him his swimsuit before the swim meet started. I used to be so smug about this sort of thing. People who had children who would forget to bring their swimsuit to a swim practice or a swim meet. Not any more.

Otherwise they will get tough like erasers.

5-Chicken enchiladas, frozen vegetable. Use a can of enchilada sauce, chicken quarters meat, cheese, flour tortillas.

6-Ground beef gravy over mashed potatoes, steamed broccoli. Brown ground london broil, season to taste with garlic powder or salt, salt and pepper if desired, add can of cr. of mushroom soup, can of water, or almost a can of water and stir until smooth and heat through. You can add some worcestershire sauce if you have it. Put on mashed potatoes.

7-Pizza, frozen vegetable

Possible dessert ideas this week could be snickerdoodles. Apple pie if you buy more apples and apple pie enchiladas if you buy more apples or apple pie filling and more flour tortillas.

Apple Pie Enchiladas

I just think that this is a nifty idea!

1 (21 oz) can apple pie filling
6 (6 inch) flour tortillas
ground cinnamon
1/2 C. granulated sugar
1/2 C. packed brown sugar
1/2 C. water
1/3 C. butter or margarine
whipped cream or vanilla ice cream
1. spoon fruit filling evenly down the center of each tortilla, and sprinkle with cinnamon. roll up each tortilla, and place seam side down in baking dish.
2. Combine both sugars, water, and butter in a saucepan. Bring to a boil over medium heat, reduce heat, and simmer, stirring constantly for 3 minutes. Pour sauce over enchiladas and let stand for 30 minutes.
3. Preheat oven to 350 degrees. Bake for 20 minutes. Serve warm with whipped cream and/or ice cream. Can drizzle excess sauce over ice cream. Makes 6 servings.

This menu has been a booger to figure out. And if it seems high, it is, but there are some high end ingredients in here. Just hope that it's all here.

Menus with what's on sale for Sept. 23- Sept. 30

Sooooo...after having spent the week caring for, or being cared for, if I can come up with a menu plan other than applesauce, toast and jello, consider yourselves lucky. Mr. B.M. (Budget Menu) said that I should make a shopping list of Advil Cold Medicine, Tylenol, cough drops, sprite and juice for this week. Silly boy.



Here goes, the brain is still fuzzier than usual so forgive me if the math doesn't add up completely. I think that it does. I tried hard to include everything and add right. And you can TOTALLY make this grocery list sing for around $67 down to $65 if you are a coupon clipper. See my sidebar for couponsense the website, not couponsense the blog. NOTE: When I've made my version of this before, I've put the chicken in the pan, then the broc, then combined the rice, sour cream and soup and put that on top. I don't imagine it really matters the order of thing. I never add cheese on top either, so if you want to save your cheese for something else, do it here. The topping with the soup, rice gets all golden and yummy on it's own. I never add the mayo to the rice mix either, so just add a little more sour cream if you want, or not, instead of the mayo if you don't have it or are one of those people who thinks it's gross.

2-Pork Chops, applesauce, canned vegetable

3-Mac & Cheese, pineapple chunks

4-Chicken, mashed potatoes or oven roasted potatoes, canned vegetable, rolls

5-Ham Fried rice, canned vegetable. Make rice with some of the ham sandwich meat cut into dices, and some diced onion, can use some of the carrots and celery cooked in the rice as well. Season with garlic powder and soy sauce.

6-Spaghetti, salad

7-Leftovers. OR Baked potatoes with sour cream or supplement the leftovers with baked potatoes. Or might be a great time to pull the extra gr. beef or pork out of the freezer from the past two weeks.

Desserts: Pudding, Cheesecake Pie (see recipe on side bar)

Just make sure to do an egg count, my head is spinning, I can't count the eggs used right now.

Smart's Sunday Dinner Rolls-Carol Smart
I've made these on Mondays and Saturdays and they turned out just fine. Again do an egg count before you start. I make these without the eggs all of the time though. It's up to you.

2 C. milk
4 Tbls shortening or butter

Put these in a glass bowl in the microwave for 1-2 minutes or to just before a boil(scald). Let cool to lukewarm.

In another bowl add 1 T. yeast, 1/4 C. warm water and 1 tsp. sugar. Let it grow.
Then after 10-20 minutes or before it grows over the bowl, put it in the mixer with the milk and melted butter.

Add:
2 eggs, beaten
3 Tbls. sugar
2 tsp. salt

Add 2 C. flour and beat thoroughly. Gradually add enough flour to make a dough that can be stirred with a spoon. Knead. (You want enough flour in this so that you have a smooth elastic dough with only a slight amount of tackiness to it. Grease a bowl and the top of dough, cover and let rise to double. Make 24 rolls (when I make them I have enough to fill a 15x10 inch baking sheet) and let double again. I usually put a little oil on tops or it's on my hands when I'm shaping them to keep them from drying out. I put saran wrap on top and to let them raise. Bake at 350 till golden brown. Aprox. 15-20 minutes. Keep a close eye on them in the oven.

Cabbage Ramen Salad

Dressing:

1/4 C. sugar

1/2 C. white wine vinegar (I use white, cider or rice vinegar)

1 C. oil

2 seasoning packets from ramen package (I never use these)



Salad:

1 med. head cabbage, sliced thin or packaged cole slaw, not sure how many packages equal a head though

4 stalks green onion, sliced

1 C. almonds, sliced

2 pkgs., Ramen noodles, chicken flavor

1 C. sesame seeds



Combine dressing ingredients; mix well and chill. Combine cabbage and green onions. Roast almonds and sesame seeds at 350 degrees for 10 minutes. Cool. Crumble dry ramen. Sprinkle ramen, almonds and sesame seeds over cabbage mixture. Before serving, pour dressing over salad and toss to coat.



Variation: Add shredded cooked chicken or turkey. Or add thinly sliced char siu.



OK, so I do things a little differently when I make this but couldn't find my handwritten recipe and this was close. I crumble the ramen noodles and then on low to med heat in some butter or margarine slowly cook in a fry pan until they are golden. Then cool. And hide them until you are ready to use them, because the family will figure out quickly that these are yummy this way and they will disappear, much like croutons that never make it onto the salad. I never put sesame seeds or almonds in mine anymore so therefore I don't roast them and I probably wouldn't roast them if I did put them in, I would just dump them in the salad. But that's just me. Also, if you want to add nuts but don't have almonds, think peanuts, or chopped macadamias or cashews, or pumpkin seeds or sunflower seeds, or pistachios, Almond Accents would be fabulous. You could even pick out the sunflower seeds and peanuts and raisins out of the trail mix if you wanted to for it(raise your hand if you've ever picked out all of the m&m's out of the trail mix when no one else was home! Hand being raised right now.) Whatever you have that you like and your little salad eaters will eat.
